I have discovered that I can bake OR boil rice, whatever works best for that meal. I used to just always cook it on the stove top, but when I'm baking something else for dinner its so convenient to just stick the rice in there,too. I always use brown rice, so I'm not sure how long you'd want to bake white rice, but for brown, it can be in the oven for anywhere from 50-75 minutes. The rule of thumb is twice the amount of liquid as rice.
Last night I used a qt of homemade beef broth, chopped an onion and half a green pepper, added a tsp of salt, 2 cups brown rice. I put it in the oven along with a pan of ribs and a butternut squash. I baked everything for a little over an hour and then the whole meal was ready! The picture above shows the rice after we were done eating when I suddenly thought about using this for my tip today.

This is new idea for me--great tip! I often cook my rice in the microwave, but it usually boils over. I'll have to try this out next time!

Wow, you're right, I had never thought of that! (Well, besides casseroles that call for rice in them or something...) What a great winter tip. :)
